Did it Snow this Week?

Earlier this week it snowed and that is actually a shocking thing here in the south.  I was about an hour from home working and when I left the building, I was met with this sight...and I had no idea!


Now I know that doesn't seem like much, but it was.  In the south they don't have a lot of plows, they don't really ever salt the streets (they sand, and that's not the same), and the people here aren't really used to driving in the snow.  Because it doesn't snow that often!  An hour drive home is scary - even for a Chicago girl like me who learned to drive in the snow.  But I sucked it up, scraped off my windshield with my arm and set off.  

Derek was a little worried about me.  Probably rightly so - I was gripping the wheel with white knuckles and trying to stay away from swerving cars - but I thought it was cute.  What I thought was even cuter?  He went and filled the bed of his truck with cinder blocks to weigh it down and offered to come and get me.  So sweet!

Of course, because I'm stubborn, I said no, but I promised to pull over and call if it got bad.  A normal hour trip took me about 2 hours, but I made it home safe and sound. I am lucky to have someone who cares so much for me. Take a look.

By the way, it is supposed to be 78 degrees today.  It is hard to believe that it snowed four days ago!  Gotta love the south!

Rivalry Night

Tonight is the big game - Carolina vs. NC State.  This game is a huge deal here and it's a pretty exciting rivalry.  Derek is at the game tonight and I am enjoying it from the couch, but I can show you how we watched the last rivalry game a month ago. 


His outfit is phenomenal.  He has red pants on, too, you just can't see them in the picture.


Cheese sticks and basketball.  Does it get any better?  Maybe a win.  A win would be better.  Let's hope this game ends better than the last...  Happy Tuesday!

Valentine's Day

I hope that yesterday was filled with lots and lots of love for you.  I know it was for me...

- I got a sweet card from Derek in the morning.

- Talked to some great friends and family on the phone.

- Found a wonderful care package from my mom in the mailbox! I've been getting these heart shaped brownies since college and I still look forward to them like a giddy 5 year old every year.  :)



- Heard some amazing news that made me grin from ear to ear.

- Got lots of love from my swimmers at practice (and way too many chocolates!).

- Had a wonderful dinner with my Valentine at our new favorite sushi place. 



- Got a surprise desert, homemade, planned out, and decorated just for me.


It was a pretty great day all around.  
It's the little things in life that make me happy.

Calzone

When I was younger my mom would make calzones for us on occasion and we loved them!  In college, I learned how to make them and now, my sisters and I like to make them.  Bottom line, these things are good.

I made it last week and it was a hit!

Ingredients:  Raw pizza dough, mozzarella cheese, pepperoni, and ham.



Grease a cookie sheet and spread the dough out. Line the center of the dough with cheese, a layer of pepperoni, a layer of cheese, a layer of ham, etc.  You can actually put whatever you want on there.  After that, you wrap the dough around the filling and make sure there are no openings.  Usually I use toothpicks to keep it closed, but I didn't have any so I just hoped for the best.

After that, you put it in the over for about 45 minutes at 425 degrees and it comes out looking a little like this...


YUM! and super easy.
