Pinterest Pancakes

I tried these on a whim about a week ago and I don't think I will ever make normal pancakes again.  They are healthy and they are amazingly delicious.  They will make you re-think pancakes forever.





Ingredients:
6 egg whites
1 cup rolled oats, dry
1 cup cottage cheese
2 teaspoons sugar
1 teaspoon cinnamon
1 teaspoon vanilla

Put all the ingredients in a blender and blend until smooth and that's your batter!  Cook 'em up like you would any other pancake!



They are phenomenal.  They taste like a cinnamon french toast, and you cannot taste the cottage cheese at all! (I was worried about that.)

The website, biggest-loser-recipes.com also has some nutrition facts, which is always fun when they look like this:   3 servings, 181 calories & 2.7 grams of fat.  Not too shabby.

St. Paddy's Day

For St. Patrick's Day weekend this year I headed downtown Raleigh to check out the parade with my friend and her sweet little girl.  It was pretty fun, but really interesting.  Some of the groups in the parade were something else...

We had a blast and Victoria even tried to join the parade.  She just started walking a few weeks ago, but she took off down the street a few times!





I was shocked at how busy it was in Moore Square!  So many people!  They had a ton of Irish dancing performances and it was really cool to watch!  Their calves are insane!

Friday Favorites

1.  Cooking.  I don't know what has gotten into me lately, but I've been cooking a ton!  Most of it is healthy too!  In the past two weeks I've tried grilling brussells sprouts, bisquick-less pancakes, and healthy chocolate cake.

2.  Lime Green.  I love that lime green is everywhere right now!!  It has been my favorite color for years now, but it has not always been acceptable to wear said color.  I went to the mall yesterday and you can get anything in the color - jeans, khaki shorts, shirts, shoes, etc - the list goes on!  I actually bought a pair of lime green skinny cropped jeans and I cannot wait to wear them.  It's the color of my new team, so I will hopefully get some use out of them!



3.  March Madness.  Good basketball, a little bit of healthy bracket competition, and lots of fun rivalry.  ESPN just got a little more interesting.  It also helps that I am that random girl that has won the pot two out of the last five years by dumb luck.  I know very little about the sport.  Oh, and Illinois won today.  That's always a favorite!

4.  Spring Break.  I love that I still celebrate Spring Break as an adult.  It is only three short working days away and I am in desperate need of some R & R and some time away from my students.  I also get to my sister, Matt, and this cute little guy.  Needless to say, I am excited!



5. Nights out.  Last week some friends of mine got engaged and a bunch of us headed out to celebrate that, among other things.  It was a great night!



6.  Staff Development that really works.  Last week we had an early release and during our Staff Development time that day we were supposed to work on collegiality and workplace collaboration.  Normally, these days are a whole lot of meetings.  This time, they took us bowling!!  They put us on teams with other teachers we didn't know, they had door prizes, and they got us a cake!  What a way to boost workplace moral!! It was so fun!



7.  Dunkin Donuts.  There is a new one opening a mere .5 miles from my house in two weeks!  Ahhhh.  I'm gonna go broke!  But I cannot wait.  Even better - my neighbor is the owner.  He loves giving me coupons!!

Krazy for Kale

This week I made Kale chips for the first time ever.  I know I may be a little late jumping on the whole "kale train", but it's better late, than never, right?

Kale is a vegetable, right?  So if I can eat it and get my salty fix, instead of eating chips or Better Cheddars, I'm am game to give it a try!  I was at a pot-luck dinner with my friends last week and one of the girls brought Kale chips and believe it or not, I could not get enough of them!  Even better? - she said they were super easy to make!  So, I figured if it's easy, I could give it a try and hope to not mess it up too bad.

Here is what I did...

Take fresh kale and cut off the thick middle stems.  Tear it into bite-size pieces.   Spread them onto a cookie sheet and sprinkle olive oil on top.  Add salt, to taste.




Bake at 350 for 12-13 minutes or until the edges are brown.




That's it!!  And, they tasted pretty good.  I recommend you give it a try.

Friday Favorites

Here are some things I'm loving this week - in no particular order...


1.  Kale Chips.  They are healthy and tasty.  What's not to like?  Oh, they make my classroom smell like a vegetable. Gross.  Maybe not for school... But good, none-the-less!

2.  This guy!  How can you not smile when you see these pictures?!






3.  The color purple.  The other day someone pointed out how many purple things I had going on at once.  My new purple purse, purple nails, purple shirt.  Yowzers.  It was a little much, but I guess I've been leaning towards purple things lately.





4.  We planned our trip!!  I get to see Paula and Matt and B-Man in ONE MONTH!!  This month better go by fast!

5.  NC State Basketball games and great friends.  Over the last few weeks I've gotten to go to three NCSU games because of some really great friends who have season tickets.  Lucky for me, they enjoy my company and asked me to go more a few times.


6.  My swimmers.  Our team banquet was last week and I was a little nervous going in, but I left feeling very loved and appreciated.  It was a very fun night.


7.  Spring is coming!  The weather almost hi 60 today.  Yipee!
