I pinned a recipe a few weeks ago and then tried it recently. Wow. These sweet potatoes are easy and oh, so delicious!!
First, I cut them into small pieces. Then I added 2 teaspoons olive oil, 1 tablespoon melted butter, 1 tablespoon brown sugar, 1 teaspoon cinnamon, and 1/4 teaspoon of ground nutmeg. I mixed them all together and made sure that each piece of sweet potato was coated with the mixture.
After that, I baked them in the oven at 350 degrees for about 55 minutes.
Quonny is my happy place. A few years ago I skipped out on the trip because I was too busy and this year I was worried the same thing would happen - but I figured it out! I rearranged my schedule and snuck away for four days and it was amazing. Everyone got to come this year except Cath (and we missed her a lot!). It was a blast! I'm so happy Sandy was not worse to us. It was so nice to spend the time with my family and I can't wait to go back again!
As a teacher, I don't technically work my normal job in the summer. I still work about 25-30 hours a week, but it leaves me with a lot of free time! Here's what I've been up to lately...
A few of us teachers got together on a random Monday night for some cards, some hydration, and some puppy love. This is Balou, my friends great dane puppy! I was told that this guy is not even half of his full size yet!

I headed to the lake last week for a team-building trip with my swimmers...
I've spent quite a few days at the pool with my gals...
And I went on vacation! Because what is summer without a good vacation?! More on that to come soon, but here is one of my favorites from the trip...
Clearly I don't do make-up or hair on vacation. Don't judge. Ben seems to be alright with it.
My cousin Tommy got married to his beautiful bride Roma and there were a whole bunch of cousins in attendance. What a fun night! Friday was the actual wedding at Carniaros Inn. It was so gorgeous, I felt like I was in a movie the entire time. It couldn't have been real life it was that pretty, but it was!
On Saturday night the newlyweds hosted a wine tasting happy hour at Cuvaison. It was another gorgeous setting with great food, great wine, and we got to hang out with our family again!
